As with most non-starchy vegetables, scientists haven't tested the glycemic index of bean sprouts, but assume that it is very low due to the low amount of carbohydrates (just 5 grams/1 cup of bean sprouts).
And, those 5 grams are not equivalent to the 5 grams you'd get through bread or candy. Some of those bean sprout carbs are fiber and the rest don't really seem to have the same effect that regular, sugary carbs do on your body.
Bean sprouts are a very easy choice if you are going to include it in your Keto diet. They have very little carbs and are loaded with good nutrition to boot. Don't pass them by.
