Artichokes are Keto. Most websites will have you reading paragraphs and paragraphs of text before giving you the answer and probably try to get you to join our email list and have you bat away those pesky pop-ups as you try to get to the answer. It can be a frustrating process as you just want a yes or no answer, and a simple reason why.
Artichokes are keto because they are a low carbohydrate food. If you eat a whole artichoke you will only have consumed about 60 cal. Most of that from carbohydrate, BUT, that carbohydrate has a lot of fiber in it which doesn't really count as carbs in my book because it doesn't raise your insulin at all.
And the carbs that do make it into your bloodstream will have a very small to negligible effect on your insulin anyway which is what keto is all about; keeping your insulin as close to zero as possible. Or to be more accurate very very low for most of the day so that your body uses fat as energy instead of carbohydrates.
That's pretty much it. Yes they are Keto and the reason why is because they are very low in carbohydrates. This means they can be enjoyed if you're on a keto diet but also if you're on a low-carb diet, or a Paleo diet, or any other derivative of these newer diets that are trending nowadays.
So if you enjoy artichokes and are on the ketogenic diet then you're in luck. Boil them, make yourself a keto sauce and enjoy worry free.
